Healthy steak recipes: peppered steak with dressed potatoes

I’m not the type of person who can go on a strict diet. I like comfort food that is full of taste and feels like a treat even if it is a healthy meal. But there are times when we all feel we have overindulged. According to Carnivore Style, a well-known site for their tell-all reviews on meat selections and grilled recipes, get to know when you’re actually hungry versus eating out of habit for a fast and effective diet

So if you’re looking for healthy steak recipes, this is for you. This peppered steak with dressed potatoes is based on a recipe card from Waitrose. I have adapted it to make it more straightforward. It’s low fat and full of iron and delicious.

The quantities for this healthy steak recipe are based on two people. but it would be easy to scale it up for more.

Healthy steak recipes: Peppered steak with dressed potatoes

You will need:
  • 250g of miniature or small new potatoes
  • a bunch of asaparagus
  • 2 gherkins, finely chopped
  • 1 onion (white or red) or a handful of spring onions, finely chopped – spring onions will be the mildest, white onions should give a bit of a kick!
  • 1 tsp olive oil
  • 25g light salad cheese (or feta if you like something stronger), crumbled or chopped
  • a tsp of peppercorns, crushed, or you can use a pepper mill if you prefer
  • frying steaks (I buy mine from Ocado as part of their 3 for £10 meat offer) with any fat trimmed off
What to do:
  1. Boil the potatoes according to the packet instructions (normally around 10 minutes).
  2. While the potatoes are cooking, mix together in a bowl the chopped gherkins, chopped onion and salad cheese. Add in the tsp of olive oil and give it a good stir.
  3. Drain the potatoes and leave them in the pan to keep warm (they don’t need to be very hot for this recipe though).
  4. Heat a large non stick frying pan or a griddle. Sprinkle the steaks with the peppercorns and cook them for two minutes each side. At the same time, fry or griddle the asparagus leaving it quite firm.
  5. Mix the potatoes with the gherkin mixture, and serve it with the cooked steak and asparagus.
  6. Eat and enjoy!

Top tip

Frying steak really is quite an economical cut of steak. But the shorter time you can fry it for the better, so it doesn’t get tough. At two minutes each side it will be rare to medium rare. If this is not for you then cook it for longer and try it out. Of course you can try this recipe with better cuts of meat but that will push up the price. So it depends if you want to be thrifty or not 🙂
