Quick and easy pink pickled onions

These quick and easy to make pink pickled onions are a lively addition to an array of dishes. The recipes uses only a handful of store cupboard ingredients, but the flavour really packs a punch. Try it out with pulled pork on tacos, nachos and in rolls.

Quick and easy pink pickled onions

You will need:

  • 3-4 red onions
  • 2 tsp caster sugar
  • 260ml cider vinegar
  • 1 tsp salt

What to do:

  1. Peel the onions, then slice them as thinly as possible. If you have a mandolin, this is a good kitchen tool to use.
  2. Boil a full kettle. Put the onions in a bowl large enough to cover them with the water. When the water has boiled, pour it over the onions making sure they are all covered.
  3. Leave the onions in the water for 5 minutes to soften them.
  4. In a large jar, mix together the vinegar, sugar and salt.
  5. Drain the onions making sure as much water is out as possible (dabbing them with paper towel can help). Put them in the jar of vinegar mixture and stir the onions into the liquid.
  6. Close the jar with its lid and put it in the fridge. The onions will be ready after 30 minutes, when they will be bright pink.
  7. They can be stored in the fridge for 2-3 weeks.
