Goat’s Cheese, Beetroot, Pear & Rocket Baguette

With May upon on, not only can we enjoy seasonal fruit and veg such as Jersey Royal new potatoes, samphire and asparagus, it’s also the time to officially celebrate a superb British food. So it’s hats off to the humble sandwich, which is taking centre stage this month during British Sandwich Week.

To mark the week, which starts on Monday 8 May, I’ve teamed up with Central England Co-op to bring you my ultimate sandwich recipe. A vegetarian delight, this sandwich features goat’s cheese, beetroot, pear and rocket. It might sound a bit unusual, but I promise you it is heavenly.

To make two sandwiches you will need:Sandwich ingredients

  • A baguette or ciabatta, cut in half for two sandwiches
  • A pack of soft goat’s cheese, ideally 100-150g (I used Co-op British soft goat’s cheese, 125g which was the perfect amount and strength for this sandwich)
  • Two pears
  • A pack of beetroot
  • A bag of rocket

You can find all of these ingredients at your local Co-op store – find your local and get food inspiration over on their site

Optional extra – I dressed the rocket in raspberry wine vinegar to give the sandwich some extra zing, but it’s not essential to the flavour.

What to do:

  1. Split the goat’s cheese in half and spread it onto each piece of bread. It’s not always the easiest to spread, so it may be more a case of pressing it onto the bread.
  2. Slice the beetroot, and add several slices on top of the cheese. Make sure there is enough to run the length of the bread.
  3. Starting at the thick end of the pear, slice three or four thin pieces. Remove the stalky middle, and layer onto the sandwich.
  4. Add a handful of rocket (dressed or undressed, whichever you prefer) and close the lid of your sarnie.
  5. Pop it into a Panini or sandwich press (I have a Breville café style sandwich press, and it is fab) or under the grill. Heat the sandwich just for a few minutes to take the chill off the filling.
    6. Admire your creation before tucking in.
